Sour Cream Apple Pie
2 eggs 1/2 t vanilla
1/2 c sugar 4 medium tart apples
1 c sour cream 1 9-inch unbaked pie shell
1-1/2 T flour 1/4 t salt
Topping:
6 T brown sugar 3 T melted butter/margarine
1/2 c flour
Peel and thinly slice apples. Beat eggs lightly in a medium bowl. Add sugar, sour cream, flour, vanilla and salt, mixing well. Add apples, tossing until slices are well-coated. Turn into pie shell and bake at 400°F for 30 minutes. Remove from oven and lower temperature to 350°F. Mix topping ingredients until crumbly and sprinkle over pie. Return pie to oven and cook for 15 minutes.
