| Mexican Goulash |
| 1 lb ground beef |
1 can black beans |
| 1 can rotel |
1/2 pkg frozen kernel corn |
| 1/2 pkg frozen green beans |
onion powder |
| garlic powder |
salt pepper |
| cayenne powder |
cumin |
| chili powder |
peppers (bell, jalapeno, seranno) |
| 1 cup quinoa |
2 cups stock (or water) |
| In deep skillet, add ground beef and seasonings; brown and drain. Add vegetables; stir and cook until frozen items are thawed. Add quinoa and liquid; stir until combined. Cover and cook on medium heat for 20 minutes. Uncover, stir, serve.
Note: Amounts and particular vegetables are a suggestion and spices are to taste. Can substitute ground turkey.
