Mexican Goulash
1 lb ground beef 1 can black beans
1 can rotel 1/2 pkg frozen kernel corn
1/2 pkg frozen green beans onion powder
garlic powder salt pepper
cayenne powder cumin
chili powder peppers (bell, jalapeno, seranno)
1 cup quinoa 2 cups stock (or water)
In deep skillet, add ground beef and seasonings; brown and drain. Add vegetables; stir and cook until frozen items are thawed. Add quinoa and liquid; stir until combined. Cover and cook on medium heat for 20 minutes. Uncover, stir, serve. Note: Amounts and particular vegetables are a suggestion and spices are to taste. Can substitute ground turkey.
