Holiday Wassail
1 orange 1/2 c sugar
1 lemon 1 gallon apple cider
1-1/2 t whole cloves 2 c orange juice
3 (3-in) sticks cinnamon 1 c lemon juice
Peel orange and lemon, being careful to keep rinds intact; insert cloves in each rind strip. Combine rinds, cinnamon sticks, sugar and apple cider in a large Dutch oven; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Remove and discard rind strips and cinnamon sticks. Add orange and lemon juices to mixture, and cook wassail until thoroughly heated. Yield: about 5 quarts.
