Edith's Raw Cranberry Salad
1 qt cranberries
1 c sugar
2 pkg jello
5-6 medium apples
juice of 1 orange
1 c pecans
1/2 bag miniature marshmallows
Chop/grind cranberries. Add sugar. Let stand while preparing jello (with half the amount of water called for on the package - half hot, half cold).
Chop apples and add juice of orange to prevent browning; toss and let stand for appx 30 minutes.
Chop pecans; add pecans, apple mixture and marshmallows to cranberry mixture. Once set, cube jello and add to mixture.
Store covered in refrigerator until ready to serve.
Notes:
This is better if left in fridge overnight before serving; can add marshmallows before serving instead of before refrigerating if desired (or omit marshmallows if desired).
Juice from additional oranges can be substituted for the cold water portion of the water during jello preparation.
Jello flavor is at the preparer's discretion; typically made with red or red and green colors.
Apples can be whatever type the preparer prefers, but firmer baking apples tend to hold up better to the moisture of the mixture.
Pecans can be changed out with other nuts, such as walnuts, at the preparer's discretion, or eliminated. Larger quantity of nuts can also be used.
