| 1 c sugar | 1/2 c butter |
| 2 c flour | 2 eggs |
| 1/2 t salt | 3 ripe bananas |
| 1 t baking soda | 2 T buttermilk (or 1/2 c milk w/ 1 T vinegar) |
| 1-1/2 t baking powder | 1 T vanilla |
| pecans to taste | |
| Sift together sugar, flour, salt, baking soda and baking powder. Mix butter and eggs. Add bananas. Add dry ingredient mixture. Add buttermilk and vanilla; mix. Stir in pecans. Pour into greased and lightly floured bread pan. Bake at 350°F for 1 hour and check - may need an additional 15 minutes. Note: A double recipe will make 3 loaves. | |
