Banana Bread
1 c sugar 1/2 c butter
2 c flour 2 eggs
1/2 t salt 3 ripe bananas
1 t baking soda 2 T buttermilk (or 1/2 c milk w/ 1 T vinegar)
1-1/2 t baking powder 1 T vanilla
pecans to taste
Sift together sugar, flour, salt, baking soda and baking powder. Mix butter and eggs. Add bananas. Add dry ingredient mixture. Add buttermilk and vanilla; mix. Stir in pecans. Pour into greased and lightly floured bread pan. Bake at 350°F for 1 hour and check - may need an additional 15 minutes. Note: A double recipe will make 3 loaves.
